Spicy Chicken Sausage Spaghetti Squash "linguini"
- 1 spaghetti squash
- 3 links of chicken sausage (trader joes, I like the one with jalepeno)
- 1 diced red pepper
- 1/2 cup diced onion
- low fat Mexican cheese
- enchilada sauce
- 1 non-fat greek plain yogurt
- 1 package of taco seasoning
Bake the spaghetti squash at 375 for 50-55 mins. The last 20 mins of making the spaghetti squash, sauté the sausage (I sprinkled mine with salt and pepper too) and veggies. Remove the squash, cut the stem off, slice in half, scoop out the seeds/pumpkin like stuff, and then scrap with a fork to make the "spaghetti noodles" on to a plate. Put a handful of the noodles in a bowl, top with the chicken sausage mix, sprinkle cheese on top, and pour a little of the enchilada sauce on top.
In a little bowl, mix the greek yogurt and the taco seasoning pack and MIX! Top your bowl off with a spoonful!
